| Page Skelton – Cackalacky Pit Boss As president of the Chapel Hill, North Carolina-based Cackalacky Classic Condiment Company, the riotously creative Page Skelton has become an instrumental player in the recent revival of the neo-traditional Carolina outdoor cooking movement. A few years ago, Page began barbecuing as a means to promote and demonstrate the tastiness and usefulness of his company’s unique Cackalacky sauces and seasonings. And, in the few short years that he has been barbecuing and presiding over the stalwart Carolina-based spice company, the boisterous Skelton and his national award- winning creations have been featured on Food Network’s “BBQ With Bobby Flay” and “Rachael Ray’s Ball Park Café,” as well as Public Radio International’s “Market Place” financial news show, Comedy Central’s “Insomniac,” and a multitude food industry publications. Page’s barbecue team - Team Cackalacky - has also had the distinct honor to barbecue for the NFL’s official Super Bowl VIP tailgate party. Page is also a Certified Barbecue Judge and he has attended KCBS-accredited Barbecue Class in Kansas City – the “Mecca of Barbecue.” Among his list of cookout innovations, Skelton has invented Cackalacky Yam & Burgundy Wine Spice Sauce; an organic All-in-One Combo Condiment; BEER-B-Q Seasoning; Chicken Charger Seasoning; and the original Drummy Device drumstick holder. In addition to his famous “Chicken Lollipops” food creation, Page is also known for his penchant to, as he states the case, “put a little smoke on about anything that doesn’t move.” In addition to traditional Carolina standard cookout fare, he has also smoked octopus, pig tail, tofu, and pumpkin pie “just to see what it would taste like.” |
